BLW Recipe // Thick & Creamy Leek & Potato Soup

It Today was one of those cold grey days and I just felt like making and devouring a warm soup. I have never offered a soup to Dexter before. To be honest, I was completely terrified of the mess that would come with it, but since using the BIBaDO, I have become a bit more adventurous. I’ve had a craving for leek and potato soup ever since I purchased a bag of frozen leeks last week to keep in the freezer. Who knew I was such a big fan of the smell and taste of leeks?! Must be my Welsh roots…

What you need to make around four bowls of leek and potato soup:

1 tbsp olive oil

2 medium leeks chopped (or 100g frozen)

250g roughly chopped potatoes

2 veg stock cubes (you can buy low salt ones)

2 tbsp creme fraiche (or double cream)

seasonings to taste (garlic powder, chilli flakes, pepper, salt etc)

Leek and potato soup recipe perfect for baby led weaning. Another delicious BLw recipe to try with your little ones, super healthy and delicious too.

How to make leek and potato soup:

1.Heat the olive oil in a large sauce pan and add the chopped leeks. Fry for a minute or so.

2.Make up the veg stock (usually 190ml water per stock cube) then add to the pan, along with another 400ml of water.

3.Add the roughly chopped potatoes to the pan, then simmer with the lid on for 20-30 minutes.

4.Transfer the soup to a blender and pulse until all the lumps have disappeared.

5.Stir in the creme fraiche, then season to taste. (Obviously you will want to avoid adding salt if you are offering this to baby)

This soup is so thick that it is easy to pre load a few spoons and place them on baby’s tray. I did this along with offering hunks of bread soaked in the soup. The thickness of the soup means things don’t get quite as messy as I had envisaged which is a bonus. Dex couldn’t get enough and I wasn’t fast enough replenishing the spoons on the tray! We have plenty of soup left over which can be refrigerated for three days or even frozen, so we will definitely be having this again soon.

Let me know if you try this leek and potato soup, and what you think.

I love leek and potato soup, perfect for this time of year! Haven’t ever made it but will give this a go. Our nursery feeds them soup quite often and apparently it’s always a hit so hopefully he’ll think the same at home!! Looks delicious.
