BLW // Quick & Easy Toddler Lunches

This week my husband is off work for the first time since my return to work after maternity leave so he is in charge of looking after and feeding Dexter. Dex is 12 months old now and can tackle a wide range of foods and meal, but I wanted to make things easy for my husband. Here is a list of toddler lunch ideas for a lazy husband and hungry baby:-

  • Veggie Omelette

Omelettes are super quick to make, easily handled by baby/toddler and super healthy too. I crack two eggs into a bowl, add a little milk and whisk with a fork. I then add, tomatoes, spinach, cheese, chicken, turmeric, basil and garlic before pouring the mixture into an oiled frying pan. I cooked for a couple of minutes on the hob then throw it under the grill for two more minutes. Once cooled, I slice the omelette into chunks.

  • Tuna and Sweetcorn Sandwich

I would never normally think of buying sandwich filler because I am so adamant about preparing everything fresh, but sometimes you have to let these things go. Dex adores buns/baps/barns filled with tuna and sweetcorn sandwich filler. I like to serve them alongside some fruit, veggie sticks and a Babybel.

  • Cheese and Crackers

What lunch is simpler than cheese, crackers, fruit and veggie sticks? I like to give Dex a vast array of cheeses and this week I’ve got him some garlic and herb Philadelphia, Laughing Cow blue cheese, Cheshire cheese, cheddar and Babybels. Don’t forget the greens alongside! I offer tomatoes, cucumber sticks, carrot sticks, pepper sticks and avocado slices.

  • Jacket Potato and Salad

Dexter has always done well with jacket potatoes, which are easily topped with a bit of cheese, some of last night’s left over chilli, the aforementioned sandwich filler or just plain butter. Salad is a must alongside: tomatoes, cucumber, lettuce, small chunks of mozzarella, sliced ham and a honey and lime dressing. (Strictly for the over 1s!)

  • Burrito

This technically is nothing like a burrito, but I call it one anyway. I like to fry a little beef with some herbs and spices: cumin, coriander, garlic, oregano. Meanwhile I scramble some eggs in the microwave. When both parts are cooked, I spoon them onto tortilla wraps and add cooked peppers, avocado slices and tomato. I wrap the whole thing up and slice ready to serve to baby.

  • Pasta with a Veggie Sauce

Super simple recipe: pasta with sauce. I always have a jar of pesto readily available but I like to pre-make sauces too. I blend a range of veggies (green beans, peppers, swede, sweet potato, anything goes!) with passata, garlic, lemon juice, peppercorns, parmesan cheese and pine nuts and store it in the freezer ready to pop out and serve with some fusilli. A very quick and super healthy lunch.

I think my husband has got plenty of toddler lunch ideas for this week and I hope I’ve given you some inspo too!

Just reading this is making me hungry!! I’ve never thought to give him a jacket potato, we always tend to go for making wedges in the air fryer instead but that would be far easier!
