Baby Led Weaning | Banana & Blueberry French Toast Sandwich

 This recipe isn’t just for tiny hands learning about food; it will work perfectly for toddlers or even adults who love to indulge in a scrummy breakfast filled with flavour. Dexter is a huge fan of toast and it’s one of the few words he can actually say at 20 months old, but occasionally I like to treat him to something a little bit more decadent. 

If you’re making it for a baby, this blueberry and banana french toast sandwich can be served as is without any extras and cut into strips so it’s easy to pick up and eat. However, if you’re making it for toddlers or adults, why not drizzle over some honey or maple syrup and a sprinkle of icing sugar to really set the tone? I must admit to actually making this breakfast dish for myself more than anybody else, and even though I’m not a huge fan of bananas (unlike Dexter who adores ‘raras‘), the taste actually hugely compliments the tangy blueberries and the sweet maple syrup. 

Baby Led Weaning | Banana & Blueberry French Toast Sandwich

Ingredients

  • 2 eggs
  • 1 banana (plus extra to serve)
  • blueberries
  • 1 tsp vanilla extract
  • 2 slices bread

Instructions

  1. In a bowl, mash one banana, then add two eggs and a teaspoon of vanilla extract. Whisk together with a fork until a batter is formed.
  2. Heat a frying pan on medium-high heat and add a knob of butter.
  3. Soak one slice of bread in the banana and egg mixture until fully coated.
  4. Once the butter in the pan has melted, add the slice of eggy bread and fry gently. Once browned flip it to fry the other side.
  5. Add a second slice of bread to the egg and banana mixture and once fully coated place alongside the other slice in the frying pan.
  6. On the first slice, add slices of bananas and a few blueberries.
  7. Place the second slice on top of the first to create a sandwich and then flip so the final side of the sandwich can be cooked.
  8. Once both sides are golden, it is ready to serve. Either cut into strips for baby, or cut into triangles and add a dash of honey or maple syrup, plus a sprinkle of icing sugar.

    I never realised this is how you make french toast – I always thought it was far more complicated!! Looks like my savoury eggy bread breakfast is about to get an upgrade!!
