    Our Plans for the Year




    This post is going to be all about my hopes and dreams for 2017. I am hoping I will be able to find the time to reflect each month and post about whether or not I achieved what I wanted to do. We had an amazing 2016 (despite Brexit!) and we are looking forward to an even better 2017....

    I expect this to be quite a quiet month for us here. It's my Dad's birthday early on in the month, so hopefully we will get to go over to Wales and celebrate with him. I would like to be in regular contact with work by the end of month and organise some KIT days. We got a new Crock Pot for Christmas so I'd like to spend some time making new recipes and cooking healthy and delicious dinners for us all. It will be nice to take Dexter around the museums of Liverpool during the rainy days. We also have two Mama meets planned. One in Manchester and one in Liverpool. It will be great to meet up with my Insta buddies again.

    Another month, another birthday. This time my Mum's. Again, we would like to make sure we celebrate this special occasion over in Wales. Half term will be upon us as well, which means a week off school for my husband. It would be great to organise some day trips during this time- a visit to the soft play, Chester zoo or maybe even a couple of days away somewhere local. Maybe by now we have won the lottery (or started playing!) and we can fly somewhere hot and far away! Valentine's Day also falls this month, it would be nice to go out for a meal to celebrate, like we usually do and buy a nice gift for my husband (and I must remember a card this year too!)

    By now, the weather will be easing and the days will be longer. I love March because it is the first month of the year that has daylight after 5pm. I hope to go on lovely walks along the waterfront with Dexter and take him to the parks of Liverpool. I want to visit all the parks before we (hopefully) move at the end of the year. I want to take advantage of the longer days by sitting out on the balcony with Dexter and watching the ships and boats pass by. Maybe by now Dex can say a word or two? It will be so much fun to practise saying words with him! We can go visit a small petting zoo and see the lambs and calves. I've wanted to go and visit a farm for ages!

    It's my birthday during this month and usually we fly away somewhere hot and exotic for a two week break. For the first time ever, my husband will actually be in work on my birthday. Easter must be late this year. I would like to go away for a week or ten days, but in reality I have to think about money. It would be nice if we could find a cheapish place to go, perhaps Majorca, to get a little sun before I return to work. I'll certainly be keeping my eye on flight prices in the New Year. I will also be receiving a nice little tax rebate this month! I am looking forward to spending a bit of money on ME! A few new clothes for work, some ne make up, getting my hair done and getting my eyebrows shaped!

    This is going to be a bittersweet month for me, I know it. Dexter will turn one year old on the 20th and just a couple of weeks before that I will be returning to work. I can't say I am not looking forward to returning, but it will be hard to leave my little boy for five days a week. This month I want us to have a party to celebrate Dexter's birthday. Lots of presents, balloons and banners, and a big cake. I'm hoping my return to work will be in a branch local to me. That is my biggest hope for 2017. Neil will have a week off at some point for half term. Hopefully I can get a couple of days off together too so we can do something fun.

    Summer is here! I will be back in work full time so every day off will be precious. The nights will be light and I will race home from work to see my baby. We will spend my days off going for long walks in the sunshine, crafting at home, cuddling up and watching TV on the sofa and cooking lovely meals. We can spend the lighter evenings reading on the balcony, going for little drives around the city and eating tea al fresco. I hope there will be hot summer days when we can go to the beach in Crosby or Formby. We can go and see the red squirrels while we are there, as well as the iron men.

    This is the month that we will hopefully reach our savings target for the deposit for our house. Hopefully we will be in contact with our mortgage broker and we can start the ball rolling on sorting out a mortgage. We did try last year, but we realised that we didn't have quite as much money as we needed and we needed to have a good year of sorting out our finances. I would love to spend this month, looking at houses online and picking out a few of my favourites to go and view.

    It's my husband's birthday this month and also his big 12 hour time trial race. I want to do the same as we did in 2016 and take him away to a spa to recover afterwards. I hope I can also take a week or two off work during this month just to chill and relax with my family. I hope we spend every one of my days off wisely and do things together as a family. I'd love to take a day trip to Morecambe, spend a day on Formby beach, visit Conwy, spend a couple of days down at my sister in law's house and drive up to Scotland for a day or two.

    My husband is back to work now after six weeks off and I would like to think we are getting very close to sorting our new home. I imagine this to be a hard month after Neil having six weeks off for the summer. It's always a bit depressing to go back to work after that amount of time off. Autumn will quickly be approaching, I'd love to take Dexter to Blackpool to see the illuminations and go conker picking. Perhaps Dexter is in nursery one or two days a week. I wonder what words he will be able to say and what new skills he has learnt. I hope I am settled back in work and enjoying it.

    Another half term holiday falls this month and it would be nice to get away for a couple of days and do a city break. Hopefully money won't be as tight now. I will have been back in work for a good few months and we will have finished saving so will have a few extra hundred pounds a month. I would love to take Dexter to Paris, Rome or Berlin. Hopefully, Neil is (finally) learning to drive and we spend the last few light nights practising in Costco car park. Finally, I want to take Dexter pumpkin picking again. He'll be old enough to run around the patch this year.

    If it was a perfect world and you could plan these things to a tee, I would hope this is the month I got pregnant again. I am keen to have another baby, I have been broody since the day Dexter was born, and I don't want to wait too long. I read that eighteen months gives your body the right amount of time to heal, so conceiving now would be perfect. Of course, if our new home isn't sorted, I will want to wait. November is definitely a month for wrapping up warm and cuddling on the sofa. I want to get all my Christmas shopping done before the mad rush of December as well. Can I be as organised as I was in 2016?

    It's the month of Christmas and it will be the first one Dexter will be able to understand. I want to splash out and get him some lovely new toys and clothes. I hope by now we are in our new house and we can host Christmas in our first proper home as a family. I want to cook a full Turkey dinner with prawns to start and chocolate cake for dessert. I want to take Dexter out to meet Santa in a grotto, visit the Christmas markets, buy lots of Christmas decorations and decorate the tree together as a family.

    BLW // Our First Time in a Restaurant 




    Today we made our first trip for a meal out as a family since Dexter started weaning. I’ve been promising to take my husband for a Pizza Hut buffet lunch for months now, and I couldn’t put him off much longer.

    I have to admit, I was dreading it a bit. These are the worries that sped through my mind:

    • What if Dexter just screams the whole time and we can’t enjoy our meal (God, how selfish am I?)
    • What if the place is packed out and he gets all distracted or there’s no space for a highchair?
    • What if people start coming over and interfering (telling us he shouldn’t be eating that etc)
    • What if he makes a massive mess which is impossible to clean?

    I knew preparation was key, so I packed his plastic bib, his Nuby Sure Grip mat and a change of clothes.

    I was so pleased that the restaurant was pretty empty when we arrived. We left his car seat in the car and carried him in which saved a lot of space. The girl who greeted us at the door was great. She sorted us out a highchair and offered us a colouring book. We strapped Dex in and ordered our food and drinks.

    Dex was as happy as Larry in his highchair. He loved watching the waitresses as they moved around the restaurant and he kept smiling at them. He’s such a flirt! I went up to get some food and picked a few bits for Dexter. There was a lot of choice suitable for Dex: penne pasta, garlic bread sticks, cous cous, cucumber and breadsticks. I put a few pieces of pasta in his tray which he devoured immediately so I went back with my salad bowl and filled it up for him. He had a try if everything I offered him, plus a bit of Daddy’s pizza. He sucked the cheese and tomato off the pizza and spat the base out.

    Two people came over to the table. The first was attracted by Dexter staring at her as she was getting ready to leave. She started saying “Are you enjoying that? Doesn’t look like it, there’s more on the floor than in your belly!” I had to laugh. Yeah, there were a few pieces of penne on the floor, but he had eaten so much more than he’d dropped. He’s like his Daddy when it comes to food. The second, older lady, came over and asked how old he was. I answered seven months and turned away, effectively ending the conversation. I hate having small talk with strangers!

    Dexter ate and ate and I bet if I’d kept offering, he’d have kept eating. He loved sucking the garlic bread and kept reaching for bits off my plate.

    The clean up wasn’t as bad as I’d thought. I’d taken his t-shirt off when we’d got there so he was only wearing a vest and pants and he had mainly avoided dropping stuff on his pants. I picked up the few pieces of pasta off the floor and wiped his hands down. I had brought a plastic bag to throw the plastic bib and sure stay mat in ready to clean at home.

    All in all, it was a very successful trip! I’m going to feel so much more confident from now on taking him out for food. It’s was so much fun watching him interact with other people and trying different bits of food. Now, we just need to decide where to go next!

    BLW Recipe // Green Bean Pesto Recipe


    My Pepper Pasta Sauce recipe was such a success, that I thought it would be good to try some other pasta sauces. I had some green beans tucked away in the fridge, so decided to use them to try a green bean pesto.

    A quick an easy green bean pesto recipe using fresh ingredients. This recipe is perfect for baby led weaning (BLW) and takes minutes to make. Serve alongside some pasta. Green beans are full of vitamin C, magnesium and iron. This recipe is great for toddlers who are fussy with their food.

    Dex loves green beans. Over Christmas he ate them on both Christmas Day and Boxing Day. They are so easy to pick up and shove in his mouth and the bright green attracts his attention. Green beans are also known as French beans, string beans or snap beans and are jam packed full of Vitamin C, iron and magnesium.

    I started to make the green bean pesto by gently frying the green beans in a little olive oil. For me, it’s preferable to cook them this way so that they don’t lose any of the nutrients and they remain a vivid green colour.

    After frying them for a few minutes, I put them in the blender along with a dash of olive oil, a handful of pine nuts, lemon juice and a few shavings of parmesan. I blitzed the mixture until it formed a thick paste. You may find you need to add more olive oil if the consistency isn’t right.

    I had some tortellini stored away in the freezer, so I boiled six pieces. I only used about a tablespoon of the sauce and kept the rest in the fridge for another day. This sauce can also be frozen as well if you like.

    Alongside the tortellini and green bean pesto, I also offered a few green beans and some sweet potato. Dexter devoured the lot. The tortellini is incredibly easy to pick up and put in his mouth and soft enough to gum and swallow. He adored the green bean pesto and I can’t wait to pair it with some pasta tomorrow.

    Blogging Goals for 2017





    I started blogging in October 2016 and it’s been a pleasure to be able to record everything I’ve been doing with Dex. Through blogging, I’ve met some really lovely people and read some excellent posts. It’s been so nice to see people take an interest in what I am writing about and I’ve been so pleased in how the blog has grown in such a small amount of time. These are my five 2017 blogging goals.

    1. Post a minimum of two blog posts per week.

    Since I’ve started blogging, some weeks I would post nothing and other weeks I would post everyday. I want to ensure I am consistent with my blog posts. I don’t want to post multiple times a day, but I want to post regularly. It will be my aim to post at least two times a week with engaging and relevant content.

    2. Increase my Tots 100 ranking.

    Not everyone buys into the Tots 100 ranking, but I think it’s a good tool to see how my site is performing. What annoys people is that you sometimes drop in the ranking despite having an excellent month. This is because you are ranked against other bloggers and if they’ve had a better month than you, then you will drop places. As of December, I rank 1081 out of around 8000 bloggers. It would be a dream to break into the top 1000.

    3. Increase traffic to my site by 10% each month.

    Traffic to my blog isn’t that high and this is because I am not getting much from Google. In November (my first month), I had 560 visitors and 2400 page views. This month (so far) I’ve had 1250 visitors and 3800 page views. Most of my traffic comes from Instagram and Facebook so what I need to work on is Pinterest and most importantly, SEO. First and foremost, I need to write interesting and engaging content and then ensure I market it properly. By increasing by 10% each month, my page view targets would look like:

    Jan – 4200 Feb – 4600 Mar – 5000 Apr – 5500 May– 6000 Jun – 6600 Jul– 7200 Aug – 8000 Sep – 8800 Oct – 9600 Nov – 10500 Dec – 11500

    4. Earn money from my blog.

    I’m under no illusions that it is easy to make money from your blog, but by the end of the year I would like to be earning something. At the moment, I am lucky enough to already be receiving products to review and earning a few pence from Google Adsense. With more traffic, the ads will receive more impressions (and hopefully clicks) which would add a few pennies to the pot. Being able to charge for a blog post is the dream. I also use Amazon Affiliates and earn money if people click a link on my site and then go on to purchase something. It’s incredibly difficult to earn with this method. I’ve had 207 clicks and only one purchase, earning me 33p in two months!

    5. Increase my DA

    My current DA (as of December 2016) is 14. I was as surprised as anybody when the first Moz update came in and my score was that high. I expect it will drop as we enter the new year, but by the end of next year I want it to grow. It would make me so happy if it was over 20 by the end of 2017. That is at the top of my 2017 blogging goals. To achieve it I need to get some links on other established blogs; grow my social media following and increase my traffic. The main thing I need to do (and yes, I keep saying it) is write good content.

    I am always looking for new ways to incorporate meat into Dexter's diet. The reason we need to start feeding our babies solids at six month is because their stores of iron start to run out and we need to replace them. Meat is a great source of iron. Chicken has 1.3mg per 100g.

    This chicken nuggets recipe makes moist and most importantly, healthy, chunks of deliciousness. There's no worry of added salt and unknown ingredients. It's a simple recipe using only three ingredients (plus some extra herbs and spices) and pretty quick to make.

    I took a fillet of chicken and cut it up into nugget sized pieces. You can cut finger sized pieces if you want to make goujons. Either way works as you can see from the photo below. If baby is just starting out, you might want to try bigger pieces first.

    I prepped a baking tray by spraying it with Fry-light / Pam cooking spray and got two bowls ready. In one bowl I cracked an egg and whisked it with a spoon. In the second bowl I mixed breadcrumbs, paprika, oregano and garlic powder.

    I coated one of the pieces of chicken with the egg and then dipped it in the breadcrumb mixture. Once it was sufficiently coated I placed it on the baking tray and repeated with the rest of the chicken.

    I baked it in the oven at 180C / 350F for 20 minutes. Make sure that your chicken is cooked thoroughly by slicing into one of the nuggets. Juices will run clear and you will see only white meat, no pink.

    Leave to cool for a good ten minutes before offering to baby.

    Dexter was able to easily pick up the nuggets and the chicken was moist enough for him to chew and swallow. My husband adored these and can't wait for me to make more. He wants us to experiment with adding different herbs and spices to the breadcrumb mixture. He likened them to McDonald's Chicken Selects.

    BLW Recipe // Flatbread Pizza





    Pizzas are a huge staple in this house, we love ordering them for takeout, buying them fresh from the supermarket and making our own. Before Dex, we would make our own dough, spend hours proofing it, rolling it and baking it. We rarely have time to do this now, so we needed to find a quick way of making our favourite Italian food.

    I like to buy Lebanese flatbreads and build up pizza toppings on them. We use chicken, chorizo, spinach, ham, cheese, jalapenos; anything that you would normally put on a pizza. Of course it also needs a tomato base and we like to use a tin of Cirio pizza sauce.

    I put the pizzas under the grill for a couple of minutes until the cheese is bubbling away. I also like to make cheesy garlic breads the same way as well. (Of course if you are going to put meat on your pizza, I recommend cooking the meat first)

    It’s much healthier to offer Dex one of these pizzas instead of a supermarket or takeaway one. I know exactly what has been put on it and they are not greasy in the slightest. What’s more, I don’t have to worry about salt content either.

    Dex loves all the different tastes and the flatbread remains soft enough for him as long as it isn’t left under the grill too long. We usually make these as a quick lunch or eat them alongside a small pasta dish as an evening meal.

    2016

    2016 // My Alphabetical Year in Review





    Thank you to Maria over at Mummy to Logan for tagging me in this very different way of doing a 2016 review. This is pretty difficult, but I got there in the end. It’s been an incredible year, the best of my life so far. Here’s why:

    Alcohol – not a drop has passed my lips in 2016. I haven’t missed the hangovers or the anxiety that comes with them. I have a new found addiction to Coke Zero, but it doesn’t contain any calories or guilt!

    Baby Led Weaning started in November. It has been so much fun (and stressful!) It’s so great watching Dexter learn about new tastes and textures.

    Christmas will be spent at my Mum’s house this year. We go over on Christmas Eve. I’m making the dessert.

    Dexter was born on May 20th this year. The happiest day of my life? Can’t remember much as I was so tired.

    Baby Einstein is my favourite brand of toys. We have an activity centre, jumper and lots of little toys too.

    Fireworks – We spent New Year’s Eve, Bonfire Night and countless other summer nights watching the fireworks from our balcony.

    Grasmere – I spent my birthday here this year. We stayed in a five star hotel and I hobbled around with my big pregnant belly and ridiculously painful pelvis.

    Help to Buy ISA – we saved he maximum possible in our ISA this year. Hopefully by July 2017 we will have the amount we need for our deposit.

    Isolation – I have felt very isolated this year being off sick from work and then having a baby. For that reason I am looking forward to going back to work next year

    Job – My husband got a permanent job in a school after being on temporary contracts for three years.

    Karen (my mum) became a grandma for the first time.

    Liverpool Women’s Hospital is where I have birth to Dexter.

    Morecambe- We have visited twice this year. I love it. I can’t even tell you why, but I love being here.

    Neil (my husband) did really well during the race season and brought home lots of trophies and medals. He also became a dad for the first time and is amazing at it.

    Omelettes – I have eaten more omelettes than I care to admit this year. They say on Slimming World, you start to despise the sight of eggs. All those omelettes helped me lose 40lbs this year.

    Pregnant – I was pregnant for nearly five months in 2016.

    Quentin – Neil suggested this name for our baby but there was no bloody chance.

    Reds True Barbecue – the last restaurant Neil and I went to as a couple without a child. I can’t even remember what I ate now, but I drank a non alcoholic iced tea and when we were walking home, he made me laugh so much I was crying and holding onto the wall for support. Everyone was staring at me. I was ready to burst, they probably thought I was in labour.

    SPD – I went off sick in January suffering with this. It lasted all the way until I gave birth. It was truly horrendous, I struggled to do anything.

    Trump was elected President of the US in a shocking victory. The world became a darker and scarier place.

    Unicorn_crap_cleaneats is the Instagram username of my friend Leanne. She lives on the other side of the country and we have never met, but she has been an amazing support to me this year. She’s always there if I want to moan/screen shot her and she is one of the funniest people I’ve ever met. She truly is my twinny. Thank you Leanne for being a great mate this year.

    Vauxhall Children’s Centre is my local centre where we go to classes like Baby Babble and Music Rhyme Time.

    Waddling – I have spent most of the year waddling around either pregnant or recovering from child birth.

    Xerxes – The name of the eagle on an episode of Family Guy. I have watched more Family Guy and American dad this year than I care to remember and yes I am clutching at straws here to think of something beginning with X.

    Yawns- I have spent about 10,000 hours yawning this year due to lack of sleep. It’s all been worth it though *yawn*

    Zelda – spent a lot of January and February playing this game while I was off sick. It kept me sane. I had never been off sick before and it was really hard going from a million miles an hour to zero. This game kept my mind occupied while my body rested. It made the days go incredibly quick as well. I never did complete it.

    Dex // 7 Month Update




    Yesterday, Dexter turned seven months old. I cannot comprehend how quickly the time as gone, yet at the same time, it feels as if he’s been here forever. He is such a happy and content child, we are extremely blessed. This is what is new this month:

    • Dexter is drinking 7oz bottles around five times a day. He will often skip a bottle during the day but make up for it in the early evening.
    • He has 2/3 meals a day, all baby led. He eats things like banana, crumpets, apple, satsuma, pancakes, pasta.
    • He had his first proper illness this month and first trip to the doctors. He suffered with a runny nose and hacking cough.
    • He moved into his own room this month. We are still seeing one or two wake ups per night.
    • He now has two teeth. Both came through in the space of a couple of days.
    • He is able to get himself up on his hands and knees and shuffle backwards but cannot yet crawl.
    • He can sit unsupported and no longer falls to the side or backwards.
    • He has two or three naps a day, ranging from half an hour to two hours if I am lucky.
    • He hasn’t been weighed by the health visitor but he looks to weigh around 21lbs according to my scales.
    • The jumperoo is his favourite toy.
    • He is pooing three times a day now he’s on established solids and poos every time he goes in the jumperoo!
    • He is starting to grow out of his 6-9 month trousers. He still squeezes in a few 3-6 month tops though.
    • He loves banging his hands on the floor and scratching surfaces like carpet and sofas to make a noise.

    BLW // Chicken Enchiladas Recipe





    Oh my gosh, these enchiladas are so yummy and smell absolutely divine. I am so happy to share this chicken enchiladas recipe with you because you are going to love the taste. It’s going to be messy for baby and maybe go a little lighter on the spice but it’s going to be so much fun. The chicken is lovely and moist and easily chewed and it’s going to give baby a taste explosion!

    Start by cooking four breasts of chicken wrapped in foil in the oven for thirty minutes.

    Place the breasts in a bowl, then using two forks, pull apart the chicken until fully shredded.

    Add a tin of Cirio Finely Chopped Tomatoes with garlic and onion to the bowl, along with, a tablespoon of cumin, paprika, cayenne and oregano. You can also add a tablespoon of Tabasco, depending on how well your baby does with spice.

    Mix thoroughly then add a cup of grated cheddar cheese. Mix again.

    Spoon a couple of tablespoons of the mixture onto garlic and herb wraps (any type of wrap will do but these are my favourite). Add a little more cheese to each wrap, then roll tightly and place into an oven dish. Repeat until all the wraps are full and the chicken has been used. I like to throw even more cheese on top, because I’m a cheese addict and  I don’t smoke or drink so why not eat cheese instead?

    Bake in the oven for 40 minutes at 120C. Leave to cool for at least twenty minutes before serving to baby. These enchiladas will be piping hot when they come out of the oven and need plenty of time to cool.

    My Baby: The Wriggler




    Dexter has turned into a right little wriggle butt. Who am I kidding? He’s always been a fidgety little soul, even when he was growing in my belly.

    But recently, every time it comes to getting his nappy changed or getting dressed, he will not stay still.

    The Wonder Weeks App says that during Leap 5:

    …parents often notice that their baby starts to protest when being dressed or when a diaper is changed.

    We left Leap 5 around two weeks ago, and yet this behaviour continues. He protests by wriggling onto his side and then onto his front. I live in fear he will inadvertently roll off the changing table or bang his head on the wall.

    I’ve tried distracting him with a toy, which lasts all of two minutes; singing, letting him roll onto his front (but doing a nappy is impossible when he’s on his front, not to mention messy if he’s done a poo); changing him on the floor (my back can’t cope);  getting his dad to do it (same story) and sitting him up to get dressed.

     

    The sitting works for putting on tops, but doesn’t help me when he needs a nappy change or to put his pants on. This battle is occurring eight times a day or more: he is pooing more now he is on solids and I have to strip him down to eat two or three times a day as well.

    Dex is also so close to crawling now. He had learnt to get up onto his knees when he is on his front, and he starts rocking. I can’t believe how quickly my sweetie is growing up. I have always called him a Little Wriggly Worm, but soon I imagine he’s going to be more like a darting squirrel crawling away from me at every opportunity.

    Please tell me these protestations at getting change are just a phase and my content baby, happy to be changed and dressed will return one day! If not, I’m going to have to think of some ingenious ways to get him dressed.
