Beetroot Eggy Bread for Babies

We love giving eggy bread as a breakfast option to our baby, but sometimes it can look a little beige and bland. I’ve raved about how we’ve used beetroot that we found cheaply in the supermarket to make a huge range of recipes (see the box below) and I thought why not try it with eggy bread for babies to make a delicious breakfast that’s full of nutrients too?

Why use Beetroot?

Beetroot is becoming a baby led weaning staple ingredient for us at the moment. Why give beetroot to your baby? Well, it contains a whole load of vitamins and minerals which are great for baby:

  • fibre
  • folate
  • potassium
  • iron
  • vitamin C
  • vitamin b6
  • calcium

All of these nutrients will be beneficial for your baby to consume whilst the fibre could potentially help with constipation.

Beetroot is pretty cheap too, I picked up a packet from Tesco for less than 90p and it has made us four portions of beetroot pancakes, three portions of beetroot pasta sauce and five portions of these baby led weaning burgers, so it’s certainly excellent value for money.

What is eggy bread?

Eggy bread, also known as French toast or “pain perdu,” is a dish made by soaking bread slices in a mixture of beaten eggs, milk, and flavorings, then frying them until golden and cooked through.

How do you make eggy bread?

To make eggy bread, whisk together eggs, milk, and any desired flavorings or extra ingredients. Dip bread slices into the egg mixture, ensuring both sides are coated. Fry the bread in a lightly greased pan until golden brown on both sides.

What type of bread is best for eggy bread?

Thick, sturdy bread works best for eggy bread to prevent it from becoming too soggy. Brioche, challah, or sliced white bread are popular choices. Stale or day-old bread is also suitable as it absorbs the egg mixture better.

Can I use dairy-free milk for eggy bread?

Yes, you can use dairy-free milk alternatives such as almond milk, soy milk, or coconut milk in place of regular milk in the eggy bread mixture. It may slightly alter the taste and texture, but it should still work well.

Can I prepare eggy bread in advance?

While it’s best to cook eggy bread fresh, you can prepare the egg mixture in advance and store it in the refrigerator for a few hours. Dip the bread slices in the mixture just before cooking to ensure they don’t become too soggy.

Can I freeze eggy bread?

Eggy bread is best enjoyed fresh, but you can freeze cooked eggy bread slices for later consumption. Allow them to cool completely, then place them in a freezer-safe container or bag. To reheat, simply toast or bake them until warmed through.

Is eggy bread suitable for vegetarians?

Yes, eggy bread is typically considered suitable for vegetarians since it consists of bread, eggs, and milk. However, if you’re following a specific vegetarian diet, such as veganism, you may need to make appropriate substitutions for the eggs and milk.

Can eggy bread be made gluten-free?

Yes, you can make eggy bread using gluten-free bread to accommodate a gluten-free diet. Use gluten-free bread slices and ensure that all other ingredients and toppings you choose are also gluten-free.

If you’re wondering about the taste – I couldn’t actually taste the beetroot in this eggy bread recipe, but you can always add a teaspoon of vanilla extract if you want to add a slightly sweeter taste to them.

Eggy bread is super popular amongst Mums because of the lack of mess it involves compared to offering scrambled eggs on toast or an omelette thanks to the eggs adhering to the bread when you cook it. Baby led weaning is of course a messy business, but we keep the mess at bay with a BiBaDO coverall bib, a plastic catch-all bib and by using the Ikea Antilop highchair which has a large tray.

Can babies eat eggs?

Eggs are fine to offer to babies from six months+ as long as there are no known allergies in your family, but of course, the first time you offer them, make sure you look out for any reactions and contact your pediatrician or GP if you have any concerns.

Beetroot Eggy Bread

Delicious and healthy beetroot eggy bread - a twist on the traditional eggy bread breakfast dish. Perfect for babies, toddlers and adults alike!

Cook Time 4 minutes
Total Time 6 minutes

Ingredients

  • 1 egg
  • 40-50 grams cooked beetroot
  • splash whole milk
  • 2 slices bread
  • 1 tbsp butter

Instructions

    1. Use a blender to puree the beetroot using a splash of milk. Add the puree to a bowl along with an egg and whisk thoroughly until frothy.
    2. Soak the slices of bread into the beetroot and egg mixture, one slice at a time. Meanwhile heat the butter in a frying pan on medium heat.
    3. Add the bread and cook on each side for a couple of minutes. Remove from the heat, slice into three fingers and allow to cool fully before serving to baby.

So can eggy bread be made with anything that kind of goes together? Like spinach and tomato puréed then added to the eggs as long as it’s somewhat proportional in liquid to beetroot?

I've made it with Spinach and banana.

I'm not sure if tomatoes pureed might be a bit too watery? Could try with spinach and a teaspoon of concentrated tomato puree?
