Description

Delicious spinach and banana pancakes using only 3 ingredients! These 3 ingredient spinach and banana pancakes make the ideal breakfast food for your baby or are perfect for adults who want a quick and healthy breakfast option!


Ingredients

Scale
  • 1 egg
  • 1 banana
  • handful spinach

Instructions

  1. In a blender add spinach plus 1 tbsp water and pulse until a puree is formed.
  2. Mash a banana in a bowl with your fork (easier if the banana is ripe, if not use a blender to puree it) then add one egg and the spinach puree. Whisk thoroughly so the mixture is totally combined.
  3. Fry a little oil (coconut, frylight, butter, olive oil etc) in a pan on high heat and then add the mixture using a tablespoon to create small, baby hand-sized pancakes. Fry for a minute or so before flipping them over with your tablespoon carefully.
  4. Fry on the other side for a minute or so and then remove from the heat, making more until the mixture is used up. Leave to cool before offering them to baby.
