Roasted Courgette Fritters for Baby

Description

Delicious baby led weaning courgette fritters with added sweetcorn. jam-packed full of flavour and perfect as a lunch or dinner for baby! This courgette fritter recipe for baby can be batch prepared to save you valuable time too!


Ingredients

  • 400 grams courgette
  • 80 grams plain flour
  • 50 grams sweetcorn
  • 1 egg
  • pepper
  • garlic powder
  • olive oil

Instructions

  1. Start by preparing your courgette for the oven. I used a round courgette (summer squash) so I removed the stalk and cut it into quarters before removing the pulp and seeds. if you’re using normal courgettes (zucchini), you can simple cut off the ends and half them. (You may want to remove the skin too before roasting – up to you!)
  2. Place the courgettes on a baking tray which you have linked with baking paper. Drizzle over a little olive oil and pop in the oven at 200C for around twenty minutes. You’ll know when they’re ready as when you poke them with a fork, they’ll be mushy.
  3. Once the courgettes are cooked, leave them to cool as they’ll be super hot. If you’re using round courgettes like me, you can peel the skin away from the flesh. Pop the courgettes in a bowl and mash with a fork until a thick puree forms.
  4. Add 80 grams of plain flour and 1 egg and combine thoroughly with a fork until a batter form. Add sweetcorn (either from a tin or thawed frozen sweetcorn) and combine. At this stage add a little cracked pepper and garlic powder for some added flavour.
  5. Heat a little oil in a frying pan, then dollop the batter into the pan using a tablespoon. You should be able to fir 2 – 4 fritters in at a time.
  6. After heating for around two minutes, carefully flip the fritter over. It should flip easily, if not, leave it a little longer as it may not be fully cooked on that side yet.
  7. When you’ve cooked the fritter on both sides for around 2 minutes each, transfer to a plate and continue until you use up the rest of the batter. This recipe should make around 8 fritters.
  8. Leave to cool completely before serving to your baby.
