Leek and Potato Soup for Babies

Description

Simple to make and super delicious leek and potato soup for babies. This recipe can be enjoyed by the whole family and can be batch prepared so you have a nice easy lunch to enjoy all week long!


Ingredients

Scale
  • 1 tbsp olive oil
  • 2 medium leeks chopped (or 100g frozen)
  • 250g roughly chopped potatoes
  • 2 veg stock cubes (you can buy low salt ones)
  • 2 tbsp creme fraiche (or double cream)
  • seasonings to taste (garlic powder, chilli flakes, pepper, salt etc)

Instructions

  1. Heat the olive oil in a large sauce pan and add the chopped leeks. Fry for a minute or so.
  2. Make up the veg stock (usually 190ml water per stock cube) then add to the pan, along with another 400ml of water.
  3. Add the roughly chopped potatoes to the pan, then simmer with the lid on for 20-30 minutes.
  4. Transfer the soup to a blender and pulse until all the lumps have disappeared.
  5. Stir in the creme fraiche, then season to taste. (Obviously you will want to avoid adding salt if you are offering this to baby)
