- 1 Onion, diced
- Leftover turkey
- 1 Tin of tomatoes
- 1 tsp dried cumin
- 1 tsp dried coriander
- organic garam masala
- 1 tsp turmeric
- 1 tsp cinnamon
- 1 tsp ginger
- 1 clove of garlic
- 1 tin of coconut milk
- Rice
- Naan bread to serve
- Fresh coriander to serve
Instructions
- Set up your slow cooker and add all ingredients except the coconut milk, rice, naan and fresh coriander.
- Stir everything together, pop the lid on and cook on low for 4-6 hours.
- Before serving, add the tin of coconut milk, stir to incorporate and leave for a further 10 minutes or so.
- Serve alongside rice, naan bread and sprinkle some finely chopped fresh coriander on top.
