Description

Utterly decadent, this creamy mushrooms stilton on toast recipe will satisfy your late night hankering for a snack or will make the most wonderful lunchtime treat!


Ingredients

Scale
  • 68 mushrooms, thinly sliced
  • 50 grams stilton
  • 2 tbsp flour
  • Dash milk
  • 2 knobs butter
  • 2 slices of quality bread
  • Black pepper
  • 1/4 tsp salt
  • 1/4 tsp garlic powder

Instructions

    1. Heat a pan on medium heat and add the first knob of butter, when it’s melted and sizzling, add the sliced mushrooms.
    2. Meanwhile toast the bread under the grill.
    3. Add salt, pepper and garlic to the mushroom and continuously move around the pan with a wooden spatula until browned (3-5 minutes)
    4. Once cooked remove the mushrooms from the pan, keeping the juice in the pan and add the second knob of butter.
    5. Once it has melted, add the tablespoon of flour and use your wooden spatula to mix it quickly into the butter, being careful not to let it stick. Work it in at a small section of the pan.
    6. Once combined to make a thick paste, add the milk and very quickly mix it all together, then crumble in the stilton, again using your wooden spatula to keep the mixture moving to it doesn’t stick.
    7. Add the mushrooms back into the pan and coat them in the stilton mixture. Continuously stir until all the mushrooms are coated.
    8. Add the toasted bread to a plate, slather in unsalted butter and spoon the mushroom and stilton mixture on top of the bread.
    9. Grind a little more pepper on top and add a couple of chilli flakes if heat is your thang.
