Description
Delicious no bake cheesecake that can be prepared in less than 15 minutes! Using delicious Italian cherries, this cheesecake blends a creamy cheesecake filling with tart cherries and a lovely crunchy biscuity base.

- 150 grams cream cheese
- 300 grams cottage cheese
- 150 grams double cream
- 1 tsp vanilla essence
- 300 grams digestive biscuits
- 100 grams salted butter
- Fabbri Amarena cherry for the topping
Instructions
- In a food processor, add the digestive biscuits and butter and blitz until a doughy crumb is formed.
- Pour the mixture into your cheesecake tin and press down with a spoon. Leave to set in the fridge while you make the topping.
- For the filling, add cottage cheese, cream cheese, vanilla essence and cream to a bowl or food processor and blitz until blended.
- Pour the cheese mixture on top of the biscuit base and then leave to set in the fridge for a minimum of six hours.
- Once set, you can add the topping. For this cheesecake I have used Fabbri Amarena cherries and syrup which is available from Ocado as part of the Ciao Gusto range.
