Description

Delicious no bake cheesecake that can be prepared in less than 15 minutes! Using delicious Italian cherries, this cheesecake blends a creamy cheesecake filling with tart cherries and a lovely crunchy biscuity base.


Ingredients

Scale
  • 150 grams cream cheese
  • 300 grams cottage cheese
  • 150 grams double cream
  • 1 tsp vanilla essence
  • 300 grams digestive biscuits
  • 100 grams salted butter
  • Fabbri Amarena cherry for the topping

Instructions

    1. In a food processor, add the digestive biscuits and butter and blitz until a doughy crumb is formed.
    2. Pour the mixture into your cheesecake tin and press down with a spoon. Leave to set in the fridge while you make the topping.
    3. For the filling, add cottage cheese, cream cheese, vanilla essence and cream to a bowl or food processor and blitz until blended.
    4. Pour the cheese mixture on top of the biscuit base and then leave to set in the fridge for a minimum of six hours.
    5. Once set, you can add the topping. For this cheesecake I have used Fabbri Amarena cherries and syrup which is available from Ocado as part of the Ciao Gusto range.
