Recipe: No Bake Cheesecake
A delicious and simple cheesecake that doesn’t require baking and can be topped with whatever yummy syrups or fruit you have lying around.

  1. In a food processor, add the digestive biscuits and butter and blitz until a doughy crumb is formed.
  2. Pour the mixture into your cheesecake tin and press down with a spoon. Leave to set in the fridge while you make the topping.
  3. For the topping, add cottage cheese, cream cheese, vanilla essence and cream to a bowl or food processor and blitz until blended.
  4. Pour the cheese mixture on top of the biscuit base and then leave to set in the fridge for a minimum of six hours.
  5. Once set, you can add the toppings of your choice. As this cheesecake does not have any added sugar, I like to add fruit, syrup, chocolate sauce or icing sugar.
