Description
Delicious potato fritters for babies. Using only a couple of simple ingredients these potato fritters make the ideal baby led weaning lunch and can be batch prepared so you always have some to hand in your freezer stash!

- 250g potatoes
- 1 egg
- 2 tbsp plain flour
- garlic powder
- black pepper
- onion powder
- drizzle of olive oil
Instructions
- Peel your potatoes and cut them into small chunks. Place in a saucepan and cover with boiling water. Boil on the hob for 15 minutes or until tender.
- Leave the potatoes to cool, then whizz them into a puree using a hand blender.
- Scrape the potato puree into a bowl and add the egg, flour, garlic and onion powder and cracked black pepper. Combine thoroughly with a spoon.
- Heat a drizzle of oil in a frying pan then spoon the mixture creating small patties. You should have enough to make four fritters.
- Fry gently for 3-4 minutes before carefully flipping with a spatula. The cooked side should be golden brown.
- Fry the other side for 3-4 minutes then transfer to a plate to cool down.
- Leave to cool fully before serving to baby.
