Potato Fritters for Babies

Description

Delicious potato fritters for babies. Using only a couple of simple ingredients these potato fritters make the ideal baby led weaning lunch and can be batch prepared so you always have some to hand in your freezer stash!


Ingredients

Scale
  • 250g potatoes
  • 1 egg
  • 2 tbsp plain flour
  • garlic powder
  • black pepper
  • onion powder
  • drizzle of olive oil

Instructions

  1. Peel your potatoes and cut them into small chunks. Place in a saucepan and cover with boiling water. Boil on the hob for 15 minutes or until tender.
  2. Leave the potatoes to cool, then whizz them into a puree using a hand blender.
  3. Scrape the potato puree into a bowl and add the egg, flour, garlic and onion powder and cracked black pepper. Combine thoroughly with a spoon.
  4. Heat a drizzle of oil in a frying pan then spoon the mixture creating small patties. You should have enough to make four fritters.
  5. Fry gently for 3-4 minutes before carefully flipping with a spatula. The cooked side should be golden brown.
  6. Fry the other side for 3-4 minutes then transfer to a plate to cool down.
  7. Leave to cool fully before serving to baby.
