Ingredients
Scale
- 300 grams sweet potato boiled / steamed
- 1 egg
- 40 grams breadcrumbs
- 20 grams sharp cheddar
- black pepper
- garlic powder
- onion powder
- 2 tbsp plain flour
Instructions
- Peel your large sweet potato and chop into smaller pieces. Boil or steam for around 20 minutes until soft.
- Once cooled, add to a bowl alongside 1 egg, 40 grams of breadcrumbs, 20 grams of finely grated sharp cheddar, black pepper, garlic powder and onion powder.
- Mash the sweet potato with the back of a fork and combine with the other ingredients, add 2 tbsp of flour and a sort of dough will form.
- Using a spoon, pop the dough into a piping bag, freezer bag or into cling film and roll into a thick sausage shape.
- Pop in the freezer for around 30 minuets to help solidify the 'dough'.
- Meanwhile preheat the oven to 170C and prep a baking tray with baking paper and a little cooking spray.
- After this time, get the 'dough' out of the clingfilm/freezer bag onto a chopping board and slice the sausage shape in half lengthways before then cutting into 2cm tots width ways.
- Pop the tots onto the baking tray and place in the oven for 15 minutes. After this time, flip the tots over and bake for a further 5 minutes. The sweet potato bites should have turned golden brown but will still be soft on the inside.
- Leave to cool fully before serving to baby.
Notes
