An easy to follow recipe perfect for baby led weaning french toast. This recipe is great for babies, toddlers and adults alike.

- 2 eggs
- 1 banana (plus extra to serve)
- blueberries
- 1 tsp vanilla extract
- 2 slices bread
Instructions
- In a bowl, mash one banana, then add two eggs and a teaspoon of vanilla extract. Whisk together with a fork until a batter is formed.
- Heat a frying pan on medium-high heat and add a knob of butter.
- Soak one slice of bread in the banana and egg mixture until fully coated.
- Once the butter in the pan has melted, add the slice of eggy bread and fry gently. Once browned flip it to fry the other side.
- Add a second slice of bread to the egg and banana mixture and once fully coated place alongside the other slice in the frying pan.
- On the first slice, add slices of bananas and a few blueberries.
- Place the second slice on top of the first to create a sandwich and then flip so the final side of the sandwich can be cooked.
- Once both sides are golden, it is ready to serve. Either cut into strips for baby, or cut into triangles and add a dash of honey or maple syrup, plus a sprinkle of icing sugar.
