Quinoa and Beetroot Burgers for Babies

Description

Delicious and healthy quinoa and beetroot burgers using feta and spinach to add nutrition and flavour. Looking for recipes using quinoa for babies? Look no further than this simple baby led weaning burger!


Ingredients

Scale
  • 60 grams steamed beetroot I used one ball of beetroot from the pack I bought
  • 30 grams feta
  • 1 egg
  • 80 grams spinach
  • 50 grams uncooked quinoa
  • 3 tbsp plain flour

Instructions

  1. Cook the quinoa as per the instructions on the packet. Meanwhile blitz your beetroot in a food processor/blender. You can also wilt your spinach at this stage either on the hob or by pouring boiling water over it while its in a colander. If you choose the latter, ensure the spinach has as much moisture squeezed out as possible before finely chopping it
  2. In a bowl add blitzed beetroot, crumbled feta, spinach, one egg, cooked quinoa and mix together. Once fully combined, add the flour and you will see the mixture become denser.
  3. Heat a little oil in a frying pan, then using a tablespoon, create walnut sized balls and place in the pan, flattening them with the back of the spoon. After 3-4 minutes, turn them over and flatten again.
  4. You can cook 3-4 patties at a time, until all the mixture is used. Leave to cool completely before serving to baby.
