Baby Led Weaning Recipe: Spinach, Carrot and Asparagus Fritters

I am always looking for ways to use up the old purees I’ve got stocked in my freezer. So far I’ve made sweet potato pancakes and egg muffins. Both of which have gone down a treat whilst getting those healthy vegetables in Dex as well. This baby led weaning fritters recipe is so similar to the pancake recipe and doesn’t have to use purees either.

I put 80 grams of plain flour in a bowl along with one egg. I chose four cubes of purée (spinach, carrot and asparagus) and defrosted them in the microwave before adding them to the bowl. At this point you can add anything to the flour and the egg: tuna, sweet corn, grated courgette, grated carrot, prawns, chicken, smoked salmon, the list goes on and on.

 

I combined the ingredients until a thick gloopy batter formed. You may need to add water to get the right consistency if you are using drier ingredients than I did.

Next, I dolloped tablespoons of the mixture into a heated frying pan which I had greased with coconut oil. I fried the fritters for about two minutes before flipping and frying for a further minute and a half.

 

Once I was happy they were cooked through I placed the fritters on kitchen roll to soak up the excess oil.

These fritters turned out illuminous green thanks to the spinach and asparagus which is great for making sure they catch Dexter’s eye.

 

I’ll be the first to admit, I didn’t try these, they don’t really appeal to me at all but Dex gobbled two of them up. I froze the rest to have as a snack or meal some other time.
