I’m sure I can’t be the only one who gets overwhelmed from time to time with this baby led weaning malarky. It can be such hard work trying to think up different meals to offer baby and not get stuck in a rut offering the same food day in, day out. Some days I also feel pretty lazy. It can be a tough gig cooking three meals from scratch everyday, especially if you have other children to look after too and even more so if those other children are toddlers! This 3 ingredient baby led weaning pancake recipe is designed for those lazy mornings where you just want to throw three ingredients into a bowl, mix it up and create a healthy, yet yummy breakfast for your baby. If you’re lucky, your toddler might even have one or two as well!

3 ingredient spinach and banana pancakes on a chopping board

This recipe is essentially the 2 ingredient banana pancake recipe, with some spinach thrown in for some extra nutrition. It takes less than five minutes to prepare, five minutes to cook and will probably be devoured in an equal length of time. Little baby sized pancakes like these are one of my favourite foods to offer to baby, especially when they’re first starting out with baby led weaning because they’re so soft and really easy for them to handle and self feed. If you are brand new to baby led weaning, this pancake recipe is the perfect first food and very similar to Dexter’s first ever food on our baby led weaning journey.

Ingredients
3 ingredient spinach and banana pancakes on a chopping board
Instructions
  1. In a blender add spinach plus 1 tbsp water and pulse until a puree is formed.
  2. Mash a banana in a bowl with your fork (easier if the banana is ripe, if not use a blender to puree it) then add one egg and the spinach puree. Whisk thoroughly so the mixture is totally combined.
  3. Fry a little oil (coconut, frylight, butter, olive oil etc) in a pan on high heat and then add the mixture using a tablespoon to create small, baby hand-sized pancakes. Fry for a minute or so before flipping them over with your tablespoon carefully.
  4. Fry on the other side for a minute or so and then remove from the heat, making more until the mixture is used up. Leave to cool before offering them to baby.
