I am always looking for new ways to incorporate meat into Dexter’s diet. The reason we need to start feeding our babies solids at six month is because their stores of iron start to run out and we need to replace them. Meat is a great source of iron. Chicken has 1.3mg per 100g. This baby led weaning chicken nuggets recipe makes moist and most importantly, healthy, chunks of deliciousness. There’s no worry of added salt and unknown ingredients. It’s a simple recipe using only three ingredients (plus some extra herbs and spices) and pretty quick to make.

Why offer chicken to your baby?

Chicken is versatile, easy to cook and can be served in a range of different ways, making it one of my favourite meats to offer to baby.

Chicken is a good source of growth-boosting protein and can be served alongside a small portion of carbohydrates and lots of veggies to create a balanced and healthy meal for your baby.

  • Lean chicken is an excellent source of amino acids, used to build muscle tissue
  • A good source of Vitamin B12 – keeps the body’s nerve and blood cells healthy
  • Contains zinc – aids metabolism, digestion and nerve function
  • Good source of iron – important for making red blood cells

Aren’t chicken nuggets unhealthy though?

I have always been of the mindset that we should be able to eat a little bit of everything, as long as we do so in moderation.

Chicken nuggets from a fast food joint are unhealthy. Even the ones you get at a supermarket aren’t much better and can often contain filler to bulk out the chicken content.

These baby led weaning chicken nuggets on the other hand use only fresh chicken breast to make a delicious meal for your baby!

How to make baby led weaning chicken nuggets

  • I took a fillet of chicken and cut it up into nugget sized pieces. You can cut finger sized pieces if you want to make goujons. Either way works! If baby is just starting out, you might want to try bigger pieces first so he can grip the goujon/nugget in his fist.
  • I prepped a baking tray by spraying it with Fry-light / Pam cooking spray and got two bowls ready. In one bowl I cracked an egg and whisked it with a spoon. In the second bowl I mixed breadcrumbs, paprika, oregano and garlic powder.
  • I coated one of the pieces of chicken with the egg and then dipped it in the breadcrumb mixture. Once it was sufficiently coated I placed it on the baking tray and repeated with the rest of the chicken.
  • I baked it in the oven at 180C / 350F for 20 minutes. Make sure that your chicken is cooked thoroughly by slicing into one of the nuggets. Juices will run clear and you will see only white meat, no pink. If you want a faster cook time, try cooking on the stovetop in a carbon steel wok with some avocado oil.
  • Leave to cool for a good ten minutes before offering to baby.

What did Dexter think of these baby led weaning chicken nuggets?

Dexter was able to easily pick up the nuggets and the chicken was moist enough for him to chew and swallow. My husband adored these and can’t wait for me to make more. He wants us to experiment with adding different herbs and spices to the breadcrumb mixture. He likened them to McDonald’s Chicken Selects.

Description

A simple way to make homemade baby led weaning chicken nuggets – a tasty dinner time treat for your baby!


Ingredients

  • 1 chicken breast fillet
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 tsp oregano
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder

Instructions

    1. Pre heat your oven to 180C / 350F
    2. Take one fillet of chicken and cut it up into nugget or goujon sized pieces.
    3. Prep a baking tray by spraying it with Fry-light / Pam cooking spray and get two bowls ready.
    4. In the first bowl, add one egg and stir with a fork until combined.
    5. In the second bowl add breadcrumbs, garlic powder, paprika and oregano and combine.
    6. One by one coat the chicken in the egg mixture, followed by the breadcrumbs. Once sufficiently coated, place on the baking tray and repeated with the rest of the chicken.
    7. Bake in the oven for 20 minutes. Make sure that your chicken is cooked thoroughly by slicing into one of the nuggets. Juices will run clear and you will see only white meat, no pink.
    8. Leave to cool for a good ten minutes before offering to baby.
